Cooking is a vocation for him, to which he passionately devotes around 12 hours of his day. As head chef at the Castel , he has spent over 70,000 hours cooking for his guests, creating new dishes, sometimes failing, doing things differently and ultimately finding the perfect flavour.
After 30 years as a chef, one thing is clear: good things take time. And when you multiply time with passion, great things are created.

Few things illustrate this year's main theme of "Time" better than the 30th anniversary of our head chef Gerhard Wieser. You can imagine how much time he has invested over these three decades to ensure that his guests are spoilt with first-class culinary delights. In doing so, the "Pusterer" has never lost sight of the essentials beyond his goal of always being among the best. Because in his kitchen, the product is the star, there is no room for unnecessary showmanship.
A constant evolution, always geared towards the tastes of our guests, makes him today not only a guarantor of gourmandise, but also one of the best, multi-award-winning chefs in the Alpine region. We would like to thank him for 30 years as head chef, congratulate him on this anniversary and say: goal achieved!
