July 2025 - a Castel story by Ivana Capraro

Appius 2020 - St. Michael-Eppan Winery

Every month we present a wine from our cellar recommended by our sommelier Ivana Capraro for that month.

July 2025

With experience into a beautiful future.

As a sommelier, it is my passion to present exceptional wines - but it is the stories behind the bottles that fascinate me most.

Appius 2020 from the St. Michael-Eppan winery tells one of these stories: the visionary project of Hans Terzer, an icon of South Tyrolean viticulture, which is now being continued by his talented successor Jakob Gasser.

This vintage marks the smooth transition between two generations - united by a shared passion and vision.

The winemakers

Hans Terzer and Jakob Gasser

Unlike usual, this time I am writing about the winemakers rather than the winery. Because Hans Terzer not only shaped the South Tyrolean wine world - he gave it its identity and international reputation. With sensitivity, patience and an almost musical flair, he turned the St. Michael-Eppan winery into a place where nature and grapes are treated with respect.

His philosophy: the vineyard dictates the rhythm, man listens. Jakob Gasser, a young oenologist with a clear eye for precision and sustainability, is now taking over. Instead of copying, he reinterprets - with respect for the heritage and the courage to make his own mark.

Appius 2020 is their first joint work: a silent dialogue between generations, past and future.

The wine

Appius 2020

The eleventh year was a challenge - with a happy ending

Appius was created in 2010 to bring together the best of the St. Michael-Eppan winery every year in a single, precisely composed cuvée. More than just a wine, Appius embodies the idea of perfection - the result of careful selection and masterful vinification.

For this prestigious project, a dedicated wine cellar was created by architect Walter Angonese, emphasising the importance of Appius. Each vintage is given an individually designed label by the artist collective Life Circus. With only 8,000 bottles and 800 magnums, Appius is also a coveted collector's item.

The 2020 vintage placed high demands on vines and people. Despite difficult conditions, a wine of exceptional elegance and depth was created. Chardonnay takes centre stage, accompanied by Pinot Grigio, Pinot Bianco and Sauvignon Blanc.

Vinification is carried out with the utmost precision: fermentation, reduced malolactic fermentation, ageing in barriques and tonneaux, followed by three years of maturation on fine lees in stainless steel tanks. The result is a multi-layered, lively wine with great ageing potential - a quiet dialogue between nature, craftsmanship and time.

Grape variety:

Blend: 60% Chardonnay, 20% Pinot Grigio, 10% Pinot Bianco, 10% Sauvignon Blanc

Colour:

Chartreuse yellow with greenish reflections

On the nose:

Tropical fruit, peach, citrus notes (grapefruit), aromatic herbs (sage, rosemary), yeast aromas (brioche), roasted notes (hazelnuts, cloves)

On the palate:

Great freshness, vibrant acidity, balanced, elegant and with remarkable persistence

Pairing:

One of the iconic dishes from our award-winning chef Gerhard Wieser: Black cod with portobello mushroom, goulash oil and pointed cabbage

Salute!

Why do I recommend this wine?

Because Appius was born from a bold vision at a time when South Tyrol's wines were still underestimated. It embodies careful selection, patience and an independent identity beyond trends.

Behind it is Hans Terzer, whose dream is being carried on with passion by a new generation - a story that also reflects my love of challenges.
